Very mild cauliflower and potato curry

Is it a curry? I don't know, it is kind of dry with Indian spices and I can find no better word for it. Very mild preparation, perfect for kids, and if you prefer it hot, just add some chillies. Serve with roti or flatbread with optional dollop of greek yogurt. Done in under 30 minutes.

My baby did not like cauliflower at first, but now she does. We didn't have to try too often and one day it just tasted nice I guess. Never give up if your baby does not like something the first time round. Try different preparation, different herbs and spices, different textures, and eventually it will click.

Serves 2 and a baby

Ingredients

1 small cauliflower*

4 potatoes*

4 shallots*

4 tomatoes*

1 teaspoon cumin seeds

1/2 teaspoon turmeric powder

1 tablespoon sunflower oil*

salt and chilli powder to taste

small bunch of fresh coriander

Cooking

Peel and quarter potatoes, divide cauliflower into large florets and boil them together with a little bit of salt for 10 minutes, or until soft but not overcooked. In the meantime, heat oil in a large pan, add cumin seeds and quartered shallots, fry for a minute. Now add turmeric powder and cooked cauliflower and potatoes. Mix gently with the spices. Now add quartered tomatoes and mix gently. Cover an cook on a low heat for 5 minutes. Garnish with fresh coriander leaves. Season to taste.
