Cocoa and coconut soft oat bars
Chocolate and coconut deliciousness! Just as good as the shop bought ones, you know the organic baby brand that shall not be named here, or even better. You can still make them 100% organic at home and adjust the ingredients to taste. They are vegan and have no added processed sugar. However, they are still sweet and have plenty of natural sugars, so go easy on them yourself and only give them to kids once in a while, rather than as a regular treat. Either way, these are a great alternative to chocolate or any other sweets that your kids would love to eat.

Makes 20 bars
240g porridge oats*
50g desiccated coconut*
60g coconut oil*
10g cocoa powder*
120g dates*, stones removed, that's about 8 of these
200ml coconut milk*
Heat the oven to 160C.
Blend coconut milk with dates and sultanas into a smooth paste. In a bowl mix all the dry ingredients: oats, coconut and cocoa powder. Add coconut oil and coconut milk / date / sultana paste and mix well.
Transfer into a large ovenproof dish and spread it evenly. Bake for 25 minutes. Cut into bars and have a taste! Store in the fridge for a good few days.
