Chickpeas, carrot and watercress salad

I love salads, but they are not always going great with the baby. She still has very few teeth and so cannot chew raw veggies very well, she also cannot deal with salad leaves as there is nothing to bite. She managed to eat this one just fine and there is some evidence caught on camera. Here I used grated carrot, chopped watercress and other greens, plus chickpeas that she loves. This makes a big bowl of salad. 

If you are cooking dry chickpeas, just soak them overnight and pressure cook for about 30 minutes.

Ingredients

500g cooked chickpeas* (or about 2 cans)

4 carrots*

big bunch of watercress* (or a supermarket bag)

3 spring onions*

small bunch of parsley

2 tablespoons mayonnaise*

4 tablespoons Greek yogurt*

salt to taste

Cooking

Finely chop all the greens and place them in a bowl with chick peas and grated carrot. Add yogurt and mayonnaise, and mix everything well. Season to taste. That's all.
