The best blueberry pancakes

These are the best, delicious, chunky pancakes. Very quick to make, packed with sweet and juicy blueberries, with no added sugar, just an optional serving of pure, organic maple syrup. There is nothing better if you feel like having something sweet for breakfast. This recipe makes about 10 chunky pancakes, but if you prefer the traditional shape and size, just increase the amount of milk to get the right consistency.

Serves 2 adults and a baby


200g self-raising flour*

300ml full fat milk*

1 teaspoon baking powder

1 medium egg*

pinch of salt

200g blueberries*, plus extra for serving (they really need to be fresh, not frozen)

knob of butter* and some sunflower oil* for frying

maple syrup* to serve


Whisk flour, milk, baking powder, egg and a pinch of salt until you have smooth batter. Add blueberries and stir them in with a spoon. Heat some butter and sunflower oil on a non stick pan on a low-medium heat. Spoon the mixture and fry for a couple of minutes on each side. Serve hot with extra blueberries and maple syrup.
