Banana muffins with no added sugar

This the one to make when you are left with very ripe bananas, they are sweet and soft and ideal for a cake. I have to say, I was worried that they may be too heavy with banana and honey, but no, they were absolutely perfect. Quite sweet actually, or maybe it is just me getting used to not eating processed sugar. The only thing I would have changed is the size of the cakes, the recipe I was adapting from stated 12 cup cake cases, but I believe it meant fairy cake size cases. The recipe would actually make 6 full size muffins and this is what I suggest doing.

Makes 6 muffins


2 ripe bananas*

50g sunflower oil*

1 egg*

1 tablespoon honey*

1 teaspoon vanilla extract*/vanilla paste*/vanilla pod

125g self raising flour*

6 muffin cases


Heat oven to 160C. Blend one banana with oil, honey, egg and vanilla until smooth. Add flour and mix until incorporated. Divide the mixture between the cases. Slice the second banana and place the slices on top of each muffin. Bake for 30 minutes. Remove to cool on wire rack.
